Cupcakes and alcohol… Possibly one of the best combination ever! Instead of adding any alcohol to the sponge I kept it very simple, I made half just vanilla sponge and half a very rich chocolate sponge. Then comes in the Baileys, I made a simple butter cream and added one too many spoons of Baileys oops. Anyway the icing tasted delicious and extra strong just the way I like it. I piped this onto the cupcakes using a basic swirl method and then melted some Cadburys chocolate to drizzle on top of the cupcakes. Ta da a soft sponge with velvety icing with a kick of Bailey Irish cream.
