Pina Colada – These were perfect for the summer BBQs. I made the cupcakes with desiccated coconut inside to give that sweet coconut taste. I then made some buttercream icing and added some Malibu (alcohol) into the icing to give it a bit of an adult twist. I topped the cupcakes with a glacier cherry and mini umbrella to give them that holiday look. I then sprinkled a bit of desiccated coconut on top to give the cupcakes the finishing touches.
Mojito – Cocktail cupcakes are perfect for summer parties. I made these for a summer birthday and they went down a treat. The cakes were made with mint leaves, a smidge of lime and some Havana Club Rum. If alcohol in the actual cake was not enough I then made some buttercream for the top which also included some Havana Club Rum. I finished the cupcakes off with an edible sugar coated mint leaf which really was delicious. You make these by brushing the mint leaves with frothed up egg white and then coating the leaves in caster sugar, leave them to dry overnight and there you have it, sugar coated mint leaves.
