Arriba Arriba, I planned a Cindo de Mayo Mexican night with the girls only we delayed it to 11 days later. Anyway I took the girls night as a great opportunity to make some Mexican themed cupcakes, what’s better than cocktails and cupcakes?
I kept to a vanilla sponge, and topped the cupcakes with Sugar and Crumbs white chocolate icing, which I must say was delicious. I then topped the cakes with my fondant toppers for a final mexican finish.
