Bakers Gonna Bake Bake Bake!
I was so excited that October’s box was in collaboration with Meringue Girls! I am a big fan of Meringue Girls and love all the colourful meringue kisses they make. October’s box was a recipe from the Meringue Girls new book Everything Sweet.
The recipe was Eton Mess Cake which was great fun to bake. First I started with making the meringue kisses, this was the first time I had made these and it wasn’t bad for a first attempt. My food colouring was even around the kisses, however, I may have taken them out the oven just a little bit early, some were a little sticky. Making the raspberry coulée was my favourite the smell coming from the raspberries being simmered was beautiful. To piece together the cake I used whipped cream however, I added some of the raspberry coulée to it to give it a raspberry twang. I was very happy with the cake and it went down extremely well after dinner with the family. Here are a few pictures from my Eton Mess Cake.
